Welsh Cakes
These are simple traditional
small cakes which are cooked in a pan or griddle on top of the
stove.
We eat them all year round but
especially on Saint David’s Day, March 1st. |

Ingredients
250 gm Self –Raising Flour
125 gm Butter
75 g of castor sugar

100 g of currants
or mixture currants/sultanas/raisins
Pinch of mixed spices
1 Egg |

Method

Rub together the butter and flour.’Big diggers little fairies’. |

Add the dried fruit and spice. |

Add the sugar and stir into the flour mixture. |

Break the egg into a bowl and mix with a fork. |

Add to the mixture.
Mix to a dough you may need to add a little milk.

Flatten the dough on a floured board until it is about 1cm thick.

Cut out circles with a pastry cutter.

Cook the cakes in a frying pan
without using oil or butter until
they are browned on both sides.

Sprinkle with sugar and serve. |
