Shrove Thursday

Unlike in many other European countries, Polish people celebrate Shrove Thursday rather than Shrove Tuesday.
Shrove Thursday falls on the last Thursday before the beginning of Lent and is the beginning of the last week of the Carnival.
On that day people are allowed to indulge in eating. These days doughnuts and deep-fried twisted cakes.

Deep-fried twisted cakes

Ingredients for 3-4 plates of cakes
· half a kilo wheat flour
· 5 yolks
· a pinch of salt
· a tablespoon spirit or vodka
· a little more than half a glass thick sour cream
· fat for deep-frying (lard or palm fat or oil)
· castor sugar for sprinkling 

1.    Sieve the flour into a large bowl, add the yolks, a pinch of salt, the spirit and sour cream.

2.    Knead the dough well (it takes quite a lot of time) so that it will be soft and flexible. Beat the dough with the rolling pin until air bubbles appear.

3.    Roll out the pastry thinly. Cut out rectangles (12x3 cm). Make a cut in each strip lengthwise in the middle. Thread one end of the strip through the opening.

4.    Fry in hot fat until golden brown, drain on the paper towel.

5.    Allow to cool and sprinkle with castor sugar.
