Tapas Festival in June: Tortilla de patatas (Spanish Omelette)

To understand Spanish food, you have to know about tapas. Tapas are not really a type of food but rather a way of eating: they are small portions of almost any variety of Spanish food. They are served in many restaurants and “tapas bars”. Especially in the summertime, it is very common for people to eat outside in the open air with their friends or family. The tapas are usually placed in the middle of the table and are shared by whoever wants some. Spanish people love to eat tapas and talk for hours and hours.

In the month of June in Málaga we celebrate our tapas festival. Tapas range from simple dishes of cheese and cured serrano ham to more exotic dishes like slices of octopus in olive oil and paprika. But perhaps the most famous and traditional tapa is the Spanish omelette, or tortilla de patatas, as it is called here. As its Spanish name suggests, it is made mostly of potatoes. Spanish people eat it hot, cold and even put it in sandwiches! Nacho Moreno, a student from class 6B at Colegio Añoreta, showed us how he made a Spanish omelette at home. ¡Buen provecho!

Ingredients
4 large potatoes
4 eggs
olive oil
salt

Directions
1. Peel the potatoes and cut them into thin slices.
2. Put the potatoes in a frying pan with abundant olive oil. When they are soft, take them out and put them in a large bowl. Take the oil out of the frying pan (you can use it again the next time you make an omelette or other things).
3. While the potatoes are frying, beat the eggs in a large bowl. Mix the eggs and the potatoes and add the salt.
4. Put the potato and egg mixture back in the frying pan. Use a spatula to help shape it.
5.Turn the omelette over to cook the other side. This is the hardest part, one that requires a bit of technique. First, slide the omelette out of the frying pan onto a plate. Hold the frying pan upside down over the plate and quickly flip the two over so the uncooked side is in the pan (see picture).
6.Cook until the omelette is firm and golden brown. Remove from frying pan. Cut into portions and enjoy!
