Easter: Torrijas (Fried Cinnamon and Honey Bread)

Holy Week, or Semana Santa as it's called in Spain, is the annual festival in which Christians celebrate the Jesus' passion, death and resurrection. In Andalusia, there are many large processions in the streets every day from Palm Sunday to Easter Sunday. People eat many special foods during Holy Week, most of which have no meat in them. This recipe is for a delicious and sweet snack called torrijas, which is made of bread, honey and cinnamon.

Ingretients
- 12 slices of bread
- 1 glass of milk
- 125 g. of sugar
- 2 eggs
- 3 g. of cinnamon
- olive oil for frying
- 250 g. of honey

Directions
Cut the bread into slices which are 1 cm thick. In a bowl, mix the milk with the honey and half of the sugar. Moisten the bread slices on one side with this mixture and let them sit overnight on a plate from which excess liquid can drain away. The next morning, beat the eggs, dip the bread slices in the egg, then fry them in hot olive oil. When they are golden brown, take them out and place them on a napkin so excess oil can drain away. Then place them on a plate and sprinkle with a mixture of cinnamon and sugar.
